Date Loaf

125g dates, deseeded
1 tsp bicarbonate of soda
1 tbsp butter
1 cup boiling water
1 egg
Salt to taste
1/4 cup sugar
2 cups (225g) flour


Chop the dates and then mix them with butter, sugar, salt and bicarbonate of soda. (Helpful hint: You may decrease the quantity of sugar to keep the sweetness to a minimum. Approximately 60g of sugar would be sufficient.) Pour boiling water and mix well. Beat the egg and add it to the mixture. Sift the flour and then stir it into the mixture.

Pour the mixture into a greased and lined 3-inch deep loaf tin. (Helpful hint: Since the mixture contains bicarbonate of soda, allow it to rest for 15 to 20 minutes before baking.)

Bake in moderate temperature (i.e. 180 degrees Celsius) for 40 minutes.
