Dried sprats (anchovy)
Red onion, sliced
Small cinnamon stick
Wash the sprats thoroughly with medium hot water to reduce excess salt. Then drain the water.
Heat oil. When oil is hot enough, add the onions, garlic, curry leaves, cinnamon and cardamom and mix well. Fry for about 2 minutes.
Add the sprats and fry for about 3 minutes, stirring continuously.
Add the potatoes and turmeric and continue cooking until the potatoes soften.
Add the chili flakes and chopped tomatoes and cook for a further 3 minutes. Then take the pan off the heat. Check the taste and add salt if necessary.
