2 eggs, lightly beaten
Oil for frying
Fries from 1 potato
Salt and pepper (to taste)
Optional ingredients: shreds of leftover cooked chicken or sausage, chopped capsicum, chopped herbs, chopped onions, grated cheese, chopped green chillies, etc.


Fry the potato and leave aside to drain the oil. Prepare the rest of the chopped ingredients.  Beat the eggs with seasoning.

Heat a flat pan (medium or low heat) and add oil. Spread the fries and the optional ingredients on the pan. Take care not to fill the pan with these ingredients so that your zege does not end up too heavy to flip over.

Pour the eggs over the ingredients and let it spread evenly. Cover the pan and let it cook until the bottom of the egg is stable and browned (If you were using low heat, you can increase it to medium now). Then carefully flip it over using two spatulas. Let the other side brown as well.

Garnish with some coriander leaves, drizzle some ketchup, and serve hot.
