Ingredients (quantities are flexible, according to your preference)
2 tbsp oil
1 onion, chopped
2 red peppers, chopped
2 cloves garlic, chopped
500g tomatoes, chopped
1 tsp chilli powder
8 slices ham
1 tin peas
Saute onion and garlic in oil. Add peppers, tomatoes, peas, chilli and seasoning.
Put mixture in baking dish. Break whole eggs over the mix. Top with ham. (Can sprinkle grated cheese if you wish.)
Bake for 20 minutes in amoderate oven.
