Brinjal Bake

 

Method

  1. Slice brinjal, toss in turmeric and salt and fry until golden brown.
  2. Prepare kheema sauce.
  3. Layer the kheema sauce and brinjals alternately in a baking dish.
  4. Spread a few slices of tomato on top.
  5. Beat two eggs and pour over the arrangement.
  6. Finish off with some drops of tomato sauce and (optional) some cheese.
  7. Bake for 15 minutes or until the egg is cooked.
