- Slice brinjal, toss in turmeric and salt and fry until golden brown.
- Prepare kheema sauce.
- Layer the kheema sauce and brinjals alternately in a baking dish.
- Spread a few slices of tomato on top.
- Beat two eggs and pour over the arrangement.
- Finish off with some drops of tomato sauce and (optional) some cheese.
- Bake for 15 minutes or until the egg is cooked.
