Tomatoes (about 2.5 medium sized)
Chilli Powder (approx. 1 tbsp)
Turmeric (approx. 0.5 tsp)
Curry Powder (twice the qty of chilli powder)
Coconut milk (thin + thick)
Lime/lemon juice (approx. 1 lime)
Temper onions. fenugreek, pandan, and curry leaves.
When it gets fried add tomatoes.
Allow it get fried until the oil gets separated and then add salt, chillie powder, turmeric, and curry powder.
Cook for a few minutes and then add thin milk.
Boil for 10 minutes and then add the fish head.
Boil for 7 minutes and then add coconut cream or thick milk. It should be dark orange colour and not too milky.
When it starts to boil, turn off heat and add lime juice.
